The aged beef txuleta is the most honest dish in Basque cooking: top-quality produce, salt and fire. Nothing else.

Our process

• Galician or Basque blond beef, aged for at least 30 days in our own cold room
• Grilled over oak wood at a controlled temperature
• Coarse Ibiza salt and roasted piquillo peppers on the side
• No sauces, no tricks: the produce is everything

Approximate weight per portion: 600-800 g. We recommend sharing between two. Cooked rare, always.
