The Gilda is the first pintxo in history: born at Bar Casa Vallés in Donostia in 1946, it is the perfect combination of three intense flavours on a cocktail stick.
The three elements
- Gordal olive — green, meaty, pitted and marinated in olive oil and herbs
- Basque chilli — Ibarra piparras, mildly hot, in cider vinegar
- Cantabrian anchovy — the same fillet that anchors our counter
A gilda with a glass of cold txakoli is the most authentic Donostia experience there is. No argument.
