Marmitako is the most seafaring stew in the Basque Country: albacore tuna, potato, choricero pepper and patience. A dish that tastes of summer on the Bay of Biscay.

The secret is the tuna

We only use northern albacore (Thunnus alalunga) from the seasonal catch, line-caught in the Bay of Biscay. The fish goes into the stew at the last moment so that it does not overcook and keeps its silky texture.
